Breakfast in a hurry

Mornings for me are a bit hurried when I’m taking the motorcycle to work. The additional time it takes to dress for the weather, do a walk around, get geared up and stow my laptop and lunch sometimes makes it difficult to “fuel up” properly breakfast wise. It’s extremely important to get some protein down if you intend to be alert for the multitude of surprises that await you on your commute. My commute is about 40 miles and takes nearly an hour and can include starting in the morning when the temperature is under 30°F. Riding in that kind of cold with an empty stomach is not wise. Keeping the core warm is essential.

With that in mind here is a really fast recipe (less than one-minute) that’ll get you out the door, fueled up and ready for the ride. I call it an “Egg in a Mug“. Basically all you need to do is:

  1. crack one (or two) egg(s) in any mug that has a round bottom
  2. cover the mug with plastic wrap (to keep the moisture in)
  3. microwave for 35 seconds
  4. tear up a piece of bread or toast or roll and toss the pieces in
  5. add salt/pepper and stir

That’s it. Under a minute to a hot breakfast with almost no cleanup and you get enough protein to keep you warm and alert for your commute and you can avoid the gas station stop and make it to work on-time.

    Sure makes it easy to stay warm here in Pa. in the winter… btw, lots of great info on your blog.

    Not a bad idea! I feel like almost everybody seems to skip out on breakfast. I'm pretty guilty as well, I tend to only get a coffee in until lunch time.
